Step #1 - Make dough (Sorry - thats a trade secret!)
Step #2 - Roll the dough into a medium sized ball
Step #3 - Let the dough ball rest for hour or so
Step #4 - Now divide the ball into smaller, equal portions and smooth into even uniform balls
Step #5 - Let the dough balls rest again for an hour on a tray
Step #6 - Take each ball from tray and lightly dust with flour
(this should ideally be done on a granite work surface)
Step #7 - Throw the pizza!
Yep - this is the fun part! ...... slowly work your fingers into the ball, spreading it out to a flat surface about 4-5 inches in diameter. When the surface is fairly even, take the now flattened pizza ball and start throwing into the air.
Because it was flattened into a near perfect circle it will keep growing in a natural way until it reaches the required size.
Step #8 - Carefully spread the now flattened dough base with your chosen pizza base, and spread toppings liberally!
Step #9 - Place in oven for required length of time.
